If you love lemon bars but want something a little sweeter and tropical, these Hawaiian passion fruit bars are a perfect alternative. They keep the bright, tangy character you expect from a citrus bar, but the sweetness of passion fruit balances the tartness beautifully and pairs wonderfully with a crisp, buttery shortbread crust.

Passion fruit, also known locally as lilikoi (pronounced “lily-koi”), has a floral, tropical aroma and a bright citrus flavor that makes these bars special. You can strain fresh passion fruit to remove the seeds and make a smooth puree, or use a quality passion fruit concentrate or puree if fresh fruit isn’t available.

Below are two recipe sizes: a family-size pan and a large-group half-sheet version. Both use the same method: press and bake the shortbread base, whisk together the filling, pour it over the hot crust, and bake until the center barely jiggles. Chill thoroughly before cutting so you get clean slices. Store finished bars in an airtight container in the refrigerator for up to a week.

For the Shortbread Base:
  • 1
    cup
    all-purpose flour
    (4.25 ounces or 120 grams) spoon into measuring cup
  • 1/4
    cup
    granulated sugar
  • 1/2
    cup
    unsalted butter
    (1 stick, melted and slightly cooled)
  • 1/2
    teaspoon
    vanilla extract
  • 1/2
    teaspoon
    salt
For the Filling:
  • 8
    large
    eggs
  • 2 1/3
    cups
    granulated sugar
    (increase sugar to 2 2/3 cups if using passion fruit concentrate)
  • 1 1/2
    cups
    passion fruit puree
  • 1/2
    cup
    all-purpose flour
Instructions
For the Shortbread Base:
  1. Preheat oven to 350 degrees. Line a 9 x 13 baking pan with foil or parchment, leaving overhang to lift the bars later. Set aside.

  2. Stir melted butter, granulated sugar, vanilla, and salt together in a medium bowl. Add flour and mix until combined. Press evenly into the prepared pan.

  3. Bake at 350°F about 15 minutes or until edges are lightly browned. While the crust bakes, prepare the filling.

For the Filling:
  1. Whisk together eggs, granulated sugar, and passion fruit puree in a large bowl. Sift the flour into the mixture and whisk until smooth.
  2. When the crust is done, slide the oven rack halfway out, pour the filling over the hot crust, return to the oven, reduce temperature to 325°F, and bake 25–30 minutes. The center should barely jiggle when done.
  3. Cool to room temperature, then refrigerate until chilled before cutting.
MAKE AHEAD NOTE: Can be stored in an airtight container in the refrigerator for up to 1 week.
  1. Lift the bars from the pan with the foil or parchment. Cut into 3 by 6 rows for 18 bars, wiping the knife between cuts. Dust with powdered sugar before serving.
