I love breakfast casseroles like this Slow Cooker Easy Egg & Sausage Breakfast Puff. It’s simple to mix up, and when served with fresh fruit it makes a hearty, satisfying breakfast that will keep you full for hours.

I prepared this slow cooker egg and sausage puff on a Sunday and refrigerated the leftovers. During the week I reheated slices for a quick, warm breakfast on busy mornings. With just eggs, sausage, cheese, milk and baking mix, it’s a great make-ahead meal prep recipe.

Easy Slow Cooker Egg and Sausage Puff Recipe

Hearty and satisfying, this slow cooker egg and sausage puff is as easy to prepare as it is delicious.

Equipment

  • 4-Quart Slow Cooker
  • Skillet
  • Mixing Bowls

Ingredients 

  • 1 pound bulk turkey breakfast sausage, casings removed
  • 6 large eggs
  • 1 cup all-purpose baking mix (such as Bisquick Heart Smart)
  • 1 cup shredded reduced-fat cheese
  • 2 cups low-fat milk
  • 1/4 teaspoon dry mustard (optional)

Instructions 

  • Choose a 2- to 4-quart slow cooker. Grease the insert and set aside.
  • Brown the turkey sausage in a nonstick skillet, breaking it into small pieces as it cooks.
  • Drain any excess grease and blot the meat with paper towels.
  • In a large bowl, stir together the cooked sausage, eggs, baking mix, cheese, milk and dry mustard (if using) until blended.
  • Pour the mixture into the prepared slow cooker.
  • Cover and cook on HIGH for 1 hour. Then reduce heat to LOW and continue to cook until the center is set, another 1 to 3 hours.
  • Uncover and let rest for 10 minutes, then cut into 8 wedges and serve.
