  • Beat powdered sugar, brown sugar, and lemon zest in a large bowl until combined.
  • Add the cream cheese in three additions, beating until smooth after each addition to prevent lumps.

  • Whisk the eggs in a small bowl until just combined, then add them to the batter and mix on low until smooth. Scrape the bowl as needed. Do not overbeat.
  • Wrap the springform pan in two layers of heavy-duty foil, pour the filling into the crust, and tap the pan to release air bubbles.
