When strawberries are plentiful at markets, pick up a little extra to make this easy-from-scratch Strawberry Dump Cake. You don’t need a boxed mix — the batter is simply a combined dry mixture that you sprinkle over the fruit, then finish with melted butter and a touch of milk and vanilla.

How to make Strawberry Dump Cake

The star of this recipe is the strawberry. Use fresh or frozen berries — frozen work beautifully if you have extras stashed in the freezer. Toss the fruit with a little granulated sugar, then spread it in a buttered baking dish.


Whisk the dry ingredients together in a separate bowl — flour, powdered sugar, salt and baking powder — and evenly layer that mixture over the sugared strawberries. In a small bowl combine melted butter, milk, and vanilla, then pour it over the dry layer. Use a fork to gently fold the wet and dry components together; a few dry spots are fine because the strawberry juices will hydrate the mixture while it bakes.

The finished cake bakes up with the aroma of warm strawberries and a tender, lightly browned topping. Serve it warm with vanilla ice cream, or add a dollop of whipped cream and a spoonful of strawberry compote if you want to dress it up.

Strawberry Dump Cake Recipe

Ingredients
- 2 cup frozen strawberry (283 g, 10 oz)
- 1 tablespoon granulated sugar (for tossing with strawberries)
- 1 ½ cup all-purpose flour (204 g)
- ⅔ cup powdered sugar (67 g)
- ½ teaspoon kosher salt (2 g)
- 1 teaspoon baking powder (4 g)
- 4 oz unsalted butter, melted and cooled (113 g)
- ¼ cup milk, room temperature (61 g)
- ½ teaspoon pure vanilla extract (optional)
Instructions
- Preheat oven to 375°F.
- Butter a 9”x9” glass baking dish (or equivalent). Add strawberries and toss with 1 tablespoon granulated sugar.
- In a small bowl whisk together flour, powdered sugar, salt and baking powder. Sprinkle this dry mixture evenly over the strawberries.
- In another small bowl combine melted butter, milk and vanilla. Pour the mixture over the dry ingredients as evenly as possible. Use a fork to gently combine the wet and dry ingredients until mostly incorporated.
- Bake for 40 minutes, until the top is lightly browned and a toothpick inserted into the center comes out clean.
- Serve warm with a scoop of ice cream.
