Aperol Spritz Made with Wine: How to Swap Prosecco for Table Wine

The Summer Spritz I Can’t Stop Making: Aperol & White Wine

Aperol with white wine is my favorite summertime spritz right now. Light, effervescent, and balanced between bitter and bright, this version replaces the usual Prosecco with a chilled, dry white wine for a softer, smoother take on the classic. Finish with a splash of sparkling water and an orange slice and you have a perfectly refreshing drink that feels like sunshine in a glass.

Can you picture it already? Come join me on the terrace for a sip.

Picture a warm summer evening: the day’s heat lingering in the air and a gentle breeze turning the page of your book. You’re settled in your favorite chair, a small plate of lemon cookies or a slice of no‑bake lemon cheesecake nearby, and a glass that catches the last golden rays of sun. The spritz sparkles as you raise it. The first sip is light, citrusy, and just bitter enough to stay interesting — the kind of drink that makes a short break feel like a mini getaway.

If you already love Aperol, this is a softer variation you’ll appreciate. If Aperol is new to you, this is an easy, approachable entry point. It pairs especially well with lemony desserts and fresh flavors — think lemon cheesecake, lemon white chocolate cookies, or a bright scoop of lemon sorbet. Prefer brunch cocktails? Try the Aperol Mimosa. For cooler weather, there are variations like a Winter Aperol Spritz or a Cranberry Aperol Spritz that bring the same bittersweet spirit to the season.

This spritz is my go-to when I want something a bit special without fuss. It’s easy to scale for guests and forgiving when you make it to taste. Let’s pour a glass and let summer do its thing.
