Ingredients

- 1 egg
- 2 ounces (about 1/2 cup sliced) avocado
- 2 tbsp plain nonfat Greek yogurt
- 1 tsp lemon juice
- Freshly cracked pepper, to taste
- Salt, to taste
Directions
- Lightly spray a skillet with cooking oil.
- Cook the egg sunny-side up until whites are set and yolk is to your liking.
- While the egg cooks, mash the avocado with a fork and stir in the Greek yogurt and lemon juice until smooth. A blender or food processor works if you prefer a creamier texture.
- Remove the egg from the pan. Add the tortilla to the skillet and toast for about a minute per side, until golden and slightly crisp.
- Place the toasted tortilla on a plate, spread the avocado mixture over it, then top with the cooked egg. Season with salt and freshly cracked pepper to taste.
