This ham and cheese quiche is a variation on our family’s bacon and Swiss quiche—similar in spirit but with a hearty combination of ham, bacon and cheddar.

Quiche is one of those dishes that feels special enough for holidays like Christmas or Easter, yet easy enough for everyday meals. The secret to a great quiche is a silky custard and a sturdy, flaky crust. Classic French technique uses a one part egg to two parts milk ratio: for this recipe, three eggs and 1 1/2 cups milk give a smooth, tender filling that sets up perfectly when cooled briefly after baking.

Coating the shredded cheese lightly with a tablespoon of flour before adding it to the quiche helps prevent the cheese from sinking and ensures even distribution. Many recipes overload the eggs, producing a rubbery texture—stick with the 3 eggs to 1 1/2 cups milk ratio for a creamy result.

For convenience I used a pre-cooked ham steak, diced into small pieces. Leftover ham from holiday meals or Sunday dinner also works well—just avoid glazed hams that could add an unexpected sweetness. This quiche is meat-forward and satisfying, with bacon and ham providing smoky depth and cheddar adding sharpness.

Ingredients

  • 1 9 inch gluten free pie crust, par-baked*
  • 1 cup Cure 81 ham, diced
  • 4 slices bacon, cooked and crumbled
  • 1 1/2 cups cheddar cheese, shredded
  • 1 tbsp gluten free flour (or regular flour if not making gluten free)
  • 3 eggs
  • 1 1/2 cups milk
  • 1/8 tsp fresh ground black pepper

Instructions

  • Preheat oven to 350°F (175°C).
  • Spread the diced ham and crumbled bacon evenly across the par-baked pie crust.
  • Toss the shredded cheddar with the tablespoon of flour to coat, then sprinkle the cheese over the meat in the crust.
  • Whisk together the eggs, milk and black pepper in a large measuring cup. Pour the custard over the meat and cheese. Bake at 350°F for 40–55 minutes. The center may still jiggle slightly—that’s fine; it will set as it rests. Allow the quiche to rest at least 15 minutes before slicing and serving.

Notes

*Directions for par-baking a crust can be found in many pie recipes; par-baking prevents a soggy bottom. Baking times vary by oven—a convection oven may finish sooner than a conventional oven.
