  • 1/2 cup (112 g) unsalted butter, at room temperature
  • 1 tsp (4 g) vanilla extract
  • 2 large eggs (100 g), at room temperature
  • 3/4 cup (180 g) sour cream, at room temperature
  • 1/2 cup (120 g) 2% milk, at room temperature

Instructions

  1. Preheat the oven to 350°F. Spray a 9 x 5-inch loaf pan with nonstick spray and line it with parchment paper.
  2. Make the cake: whisk together the flour, baking powder, baking soda, and salt. Place the granulated sugar and lemon zest in a food processor and pulse until the sugar is fragrant. Beat the butter and lemon-sugar until light and fluffy, about 3 minutes. Add vanilla, then reduce the mixer speed and add eggs one at a time. Combine the sour cream and milk in a small bowl. With the mixer on low, add the flour mixture in three additions, alternating with the sour cream mixture, beginning and ending with the flour mixture, and mix until just combined.
