Whipped Feta Tomato Toast Recipe: Bright Mediterranean Breakfast

I love avocado toast, but I also rotate this Tomato Toast with Whipped Feta into our regular lineup. My kids call it tomato garlic bread. It’s inspired by pan con tomate I enjoyed while studying abroad in Barcelona, but this version uses sliced heirloom tomatoes for bright summer flavor. If you prefer, use marinated or roasted tomatoes — both pair beautifully with whipped feta.

  • Bread: Sourdough is ideal, but any hearty, crusty bread will work.

Ways to Modify this Toast

  • Cheese: Swap crumbled goat cheese or cream cheese for feta and whip until spreadable.
  • Vegetables: Add sliced radishes, sun-dried tomatoes, shaved cucumber, artichoke hearts, thin red onion, or roasted peppers.
  • Herbs: Dill, mint, thyme, oregano, parsley, or basil all work well.
  • Spices: Try paprika, crushed red pepper, or Italian seasoning in place of or alongside za’atar.
  • Bread: Whole wheat, rosemary, or Italian loaves are good alternatives to sourdough.
  • Tomatoes: Cherry tomatoes, roasted tomatoes, or marinated tomatoes can be used instead of raw heirlooms.

How to Make Tomato Feta Toast

Step 1: Prepare the bread. Preheat the oven to 350°F. Mix room-temperature butter with minced garlic. Spread a thin layer on each slice of sourdough and sprinkle za’atar if using.

Step 2: Toast the bread. Place the buttered slices on a baking sheet and toast for 5–8 minutes, until golden and slightly crisp.

Step 3: Make the whipped feta. While the bread toasts, combine crumbled feta, Greek yogurt, olive oil, minced garlic, and lemon juice in a mixer and whip on medium for 3–4 minutes until smooth and fluffy. If you don’t have a mixer, stir vigorously in a bowl until creamy. Spread the whipped feta over the warm toast.

Step 4: Top and serve. Arrange sliced heirloom tomatoes on the whipped feta, season with a dash of salt and pepper, and garnish with fresh basil and parsley. Add another pinch of za’atar or sumac if desired. Serve immediately.

Storage Tips

This toast is best eaten fresh. If needed, store components separately: keep whipped feta in an airtight container in the refrigerator for up to 3 days and slice tomatoes just before serving to preserve texture. Assembled toast will lose crispness, so avoid storing fully assembled pieces when possible.

Ingredients

  • 8 slices sourdough bread
  • 8 tablespoons butter, room temperature
  • 2 garlic cloves, minced
  • 2 teaspoons za’atar or sumac (optional)
  • 4–5 small heirloom tomatoes, sliced
  • Fresh basil and parsley for garnish
  • Dash of salt and pepper

For the whipped feta cheese:

  • 7 ounces crumbled feta cheese
  • 2 tablespoons Greek yogurt
  • 1 tablespoon extra virgin olive oil
  • 2 garlic cloves, minced
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F. Combine room-temperature butter and minced garlic in a small bowl.
  2. Spread a thin layer of garlic butter on each slice of sourdough. Sprinkle za’atar over the butter if using. Toast for 5–8 minutes until slightly crispy.
  3. While the bread toasts, make the whipped feta: combine crumbled feta, Greek yogurt, olive oil, minced garlic, and lemon juice. Whip in a mixer on medium for 3–4 minutes until smooth, or stir vigorously by hand until creamy.
  4. Spread the whipped feta on the warm toast. Top with sliced heirloom tomatoes, season with salt and pepper, and garnish with fresh basil and parsley. Serve immediately.
