Amid our chatter, a friend insisted, “We HAVE to get the sweet potato fries here…they are THE BOMB.” I tried to hide my skepticism behind my menu.

  • 35 tbsp olive oil or pan spray
  • 1 tbsp kosher salt
  • 1 tbsp garlic powder
  • 1/21 tbsp Cajun spice (adjust to taste)

  • 3/4 cup 0% fat Greek yogurt
  • 1/2 avocado
  • 3 garlic cloves, peeled
  • 1 small handful cilantro
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Peel the sweet potatoes and slice them into thin, even fries. Use a sharp knife or a mandolin for consistent thickness—be careful with blades.
  3. Line a sheet pan with parchment paper. For the paper to stay in place, spray the pan with cooking spray first and crease the parchment in an “X” across the pan.
  4. Arrange the cut fries on the parchment in a single layer. Drizzle about 1 tablespoon of oil per pan over the fries and season with kosher salt, garlic powder, black pepper and Cajun spice.
  5. Toss the fries by hand so they are evenly coated. Roast in the preheated oven. Turn the fries about 15 minutes into baking to prevent burning and promote even cooking.
  6. Continue roasting another 10–15 minutes, until the fries are tender inside and crispy outside.
  7. While the fries bake, make the aioli: combine Greek yogurt, avocado, garlic, cilantro, lime juice, salt and pepper in a food processor or blender. Blend until smooth and taste-adjust seasonings as needed.
  8. Remove fries from the oven and serve immediately with the healthy aioli and ketchup if desired.
