This recipe yields a generous amount, so it’s great for meal prep, workweek lunches, or serving at a gathering. If you’d like fewer servings, simply halve the ingredients.

Description
This Brussels sprouts salad captures the best flavors of fall: crisp texture, a touch of sweetness, savory bacon, and tangy dressing. It’s satisfying, refreshing, and simple to prepare.

- 24 oz Brussels sprouts, roots trimmed
- 8 slices bacon
- 7 oz extra sharp white cheddar, crumbled
- 2 medium Honeycrisp apples, chopped
- 1/2 red onion, thinly shaved
- 4 oz candied pecans
Vinaigrette
- 2 tablespoons bacon grease
- 2 large cloves garlic, grated
- 1 teaspoon Dijon mustard
- 2.5 tablespoons honey
- 1/2 teaspoon each salt and pepper
- 1/4 cup apple cider vinegar
- 1/2 cup extra virgin olive oil
Instructions
Shake together the vinaigrette ingredients in a jar until well combined.
Preheat the oven to 375°F (190°C). Bake the bacon on a sheet or broiler pan for 20 minutes, flip, then bake an additional 5–10 minutes until crisp. Drain on paper towels and crumble when cool.
Using the shredding disk of a food processor (or a mandolin or sharp knife), shred the Brussels sprouts thinly. Shred the red onion to thin ribbons.
In a large bowl, combine the shredded Brussels sprouts, red onion, crumbled cheese, bacon, chopped apples and candied pecans. Add vinaigrette to taste, toss to coat, and serve immediately.
Notes
This recipe makes a substantial amount. For easy lunches, store the undressed salad base in the fridge and add dressing just before serving; it keeps well for up to 4 days.
Halve the quantities if you want fewer servings.
Extra sharp cheddar works well here; Trader Joe’s Unexpected Cheddar is a tasty option if available.
If you prefer a different sweet element, pomegranate arils or dried cherries both pair nicely with the other flavors.
