Ingredients
- 3 chicken breasts cut into 1″ pieces
- 1 tablespoon olive oil
- 1/3 cup honey
- 1 tablespoon soy sauce
- 3/4 cup water
- 1 teaspoon lemon juice
- 6 cloves garlic minced
- 1 tablespoon cornstarch
- Salt & pepper to taste
- Fresh chives or scallions chopped, for garnish (optional)
- Fresh parsley to taste for garnish (optional)

Prepare the chicken by cutting it into roughly 1″ pieces. In a small bowl whisk together the honey, soy sauce, water, lemon juice, and minced garlic.

If serving with rice, start it now. For four people, about 2 cups uncooked rice is a good guideline.

Press the Sauté function on the Instant Pot. Add the olive oil and chicken and sauté for about 3 minutes, stirring frequently to brown the pieces slightly.

Pour the honey-garlic mixture into the pot and stir to combine. Close the lid, set the valve to sealing, and cook on High Pressure for 5 minutes. The pot will take a few minutes to reach pressure.
