Ingredients 

  • 3 chicken breasts cut into 1″ pieces
  • 1 tablespoon olive oil
  • 1/3 cup honey
  • 1 tablespoon soy sauce
  • 3/4 cup water
  • 1 teaspoon lemon juice
  • 6 cloves garlic minced
  • 1 tablespoon cornstarch
  • Salt & pepper to taste
  • Fresh chives or scallions chopped, for garnish (optional)
  • Fresh parsley to taste for garnish (optional)

Instructions 

  • Prepare the chicken by cutting it into roughly 1″ pieces. In a small bowl whisk together the honey, soy sauce, water, lemon juice, and minced garlic.
  • If serving with rice, start it now. For four people, about 2 cups uncooked rice is a good guideline.
  • Press the Sauté function on the Instant Pot. Add the olive oil and chicken and sauté for about 3 minutes, stirring frequently to brown the pieces slightly.
  • Pour the honey-garlic mixture into the pot and stir to combine. Close the lid, set the valve to sealing, and cook on High Pressure for 5 minutes. The pot will take a few minutes to reach pressure.
  • When the timer finishes, perform a quick release of the pressure.
  • Switch the Instant Pot back to Sauté. Whisk 1 tablespoon cornstarch with 2 tablespoons cold water, then stir the slurry into the sauce. Cook a few minutes until the sauce thickens. Season with salt and pepper as needed. Serve the chicken and sauce over rice and garnish with chopped chives or parsley if desired.

Notes

  • You can make this on the stovetop in a large skillet: sauté the chicken as directed, then cover and cook until done. Stir in the cornstarch slurry at the end to thicken the sauce.
