Filled tortillas are a go-to, last-minute meal in our house. These Chicken Avocado Wraps with Chili Mayonnaise are perfect for lunch or a light dinner—fresh, fast and satisfying.

We tend to eat light in the evenings most of the year, except for a few cold weeks in winter when we sit down to heartier meals. I do enjoy preparing large, slow-roasted dinners on special occasions, but on weeknights a quick wrap, stir-fry or a substantial salad is more common.

The chili mayonnaise is incredibly simple to make, but it benefits from resting for about 15 minutes to allow the flavors to meld. Give it a good stir just before drizzling over the fillings.

Ingredients

  • ⅓ cup mayonnaise
  • 1 tsp dried chili flakes
  • 2 avocados, sliced
  • 1–2 tbsp lemon juice
  • 2 large chicken fillets, cooked and sliced (leftover rotisserie chicken works well)
  • 2 mangoes, peeled, stoned and sliced
  • 1 handful arugula
  • 6 large tortillas

Instructions

  1. Combine the mayonnaise and dried chili flakes, then leave the mixture to stand for about 15 minutes so the flavors develop.
  2. Sprinkle the lemon juice over the avocado slices to prevent discoloration and keep them fresh.
  3. Divide the avocado, sliced chicken, mango and arugula among the six tortillas. Drizzle each with the chili mayonnaise, then roll up the tortillas and serve.

Notes

Serve the wraps immediately for the best texture. If needed, keep them chilled in a sealed container for up to 3 hours.
