Prepare the griddle: Wipe the cooking surface and add a small amount of oil. If you’re unsure about griddle care, follow the manufacturer’s maintenance suggestions so your surface is ready to cook.
Prep the meat: Slice or tear the leftover prime rib into bite-sized pieces. If your meat is cold from the fridge, warm it briefly in the microwave for about 20–30 seconds or in a pan so it finishes warm inside the quesadilla.
