Because each layer must set before adding the next, the cake takes some time. Gelatin typically needs about two hours to set, so you can finish the cake in a single day if you plan the steps. I made the red layer the night before, the coconut layer the next morning and the blueberry layer in the afternoon—ready by dinner. Store the finished cake in an airtight container in the refrigerator for up to a week; the berries release some liquid over time, so it’s best eaten within several days.

Real Food Patriotic “Jello” Cake

Perfectly layered with seasonal berries, this “Jello” cake uses grass-fed gelatin and natural sweeteners. Adaptable to Paleo, Whole30, GAPS and AIP approaches when ingredients are chosen appropriately.

Ingredients

Red Layer

  • 2 1/2 cups 100% cherry juice, divided
  • 3 tablespoons grass-fed gelatin
  • 1/2 cup hot water
  • 2 cups fresh strawberries, washed, dried and sliced

White Layer

  • 1 1/2 cups full-fat coconut milk, divided
  • 2 tablespoons grass-fed gelatin
  • 1/2 cup hot water
  • 3 tablespoons real maple syrup or honey

Blue Layer

  • 1 1/2 cups 100% blueberry juice, divided
  • 2 tablespoons grass-fed gelatin
  • 1/2 cup hot water
  • 1 cup fresh blueberries, washed and dried

Instructions

Red Layer

  1. Pour 1/2 cup cherry juice into a medium bowl and sprinkle the gelatin evenly over the surface. Let it bloom for 5 minutes until thickened.
  2. Arrange the sliced strawberries across the bottom of a bundt pan.
  3. Pour the hot water into the bloomed gelatin and stir until dissolved.
  4. Add the remaining cherry juice, mix well, and gently pour the mixture over the strawberries. Refrigerate until set, about 2 hours.

White Layer

  1. Shake the coconut milk can or carton to combine. Pour 1/2 cup coconut milk into a small bowl and sprinkle gelatin over the surface to bloom for 5 minutes.
  2. Pour hot water over the bloomed gelatin and stir until completely dissolved.
  3. Add the maple syrup (or honey) and the remaining coconut milk, stirring to combine.
  4. Gently pour this mixture over the set strawberry layer and refrigerate until firm, about 2 hours.

Blue Layer

  1. Pour 1/2 cup blueberry juice into a small bowl and sprinkle gelatin over the surface. Let it bloom for 5 minutes.
  2. Spread the washed blueberries evenly over the coconut layer.
  3. Pour hot water over the bloomed gelatin and stir to dissolve, then add the remaining blueberry juice and mix.
  4. Carefully pour over the blueberries and refrigerate until fully set and firm, about 2 hours.

To Release the Cake

  1. Fill a sink or large bowl with warm water to submerge most of the bundt pan sides but not the top.
  2. Place the pan in the warm water for 10–15 seconds so the edges loosen slightly.
  3. Remove the pan, cover with a serving plate, invert quickly and lift the pan away. Wipe any overflow and serve chilled.

Notes

*A typical 13.5 oz can of coconut milk contains slightly more than 1 1/2 cups; you can use the entire can if you like. **Light-colored honey yields a brighter white layer; maple syrup was used in the photos.

Storage: Keep refrigerated in an airtight container for up to one week. Berries may release liquid over time.
