How to Make Personal Calzones
Turn the dough out onto a lightly floured surface. Shape it into a log and divide into individual portions — I made two larger and two smaller calzones, but sizes can vary based on appetite. Let the dough rest for about 20 minutes to relax the gluten, which makes it easier to roll.
Preheat the oven to 400°F (200°C). Spray a pizza tray or baking sheet with olive oil cooking spray, then sprinkle the surface with cornmeal to prevent sticking and add a bit of crunch to the crust.
Roll each dough portion into a round or oval about the size you want for your calzone. Place the rolled dough on the prepared tray. Spread pizza sauce or marinara over half of each round, leaving a small rim at the edge. Add shredded mozzarella and your choice of fillings — pepperoni, feta, kalamata olives, artichoke hearts, minced garlic, or any other toppings you prefer. Season lightly with sea salt, cracked pepper, and dried basil to taste.
Fold the uncovered half of the dough over the toppings to form a half-moon. Press the edges together and crimp them tightly with your fingers or a fork so the calzone is fully sealed. Make a few small vent holes on top with a fork to allow steam to escape, then spray the outside lightly with olive oil cooking spray for a golden, crisp finish.
Bake in the preheated oven for 18–20 minutes, or until the crust is firm, golden, and crisp. Remove the calzones from the oven and let them rest for 2–3 minutes to allow the filling to settle. Slice into wedges and serve warm.
